Sweet Nothings: One-Point Weight Watchers Dessert Recipes

Sugar-Free Chewy Chocolate Brownies

Makes 16 brownies, 2" x 2" each.

Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup + 2 Tbs cocoa powder
  • 3/4 cup splenda
  • 1/4 tsp salt
  • 1/3 cup unsweetened applesauce
  • 3 egg whites
  • 1 tsp vanilla

Instructions

Preheat oven to 350 F. Combine dry ingredients, stir in wet ingredients. Coat an 8x8 baking pan with non-stick spray, spoon batter into pan and spread evenly. Bake 20-25 minutes until edges are firm and center has just set.

Creamsicle Cup

MakesĀ 10 servings, 1/2 cup each.

Ingredients

  • 1 box sugar free fruit-flavored gelatin mix
  • 1 box fat-free sugar free instant pudding mix
  • 1 tub (8 oz) fat free cool whip

Instructions

Dissolve fruit gelatin in 1 cup boiling water and add 1 cup cold water. Let stand 5 minutes. Add pudding to gelatin and blend, then fold in cool whip. Refrigerate.

  • Raspberry-White Chocolate
  • Cherry-Chocolate
  • Peach-Vanilla
  • Strawberry-Banana
  • Lemon-Cheesecake

Summer Slushie

Makes 4 servings, 1 1/4 cup each.

Ingredients

  • 4 cup sliced strawberries
  • 1 1/2 cup crushed ice
  • 1/2 cup orange juice
  • 2 Tbsp white sugar

Instructions

Combine all ingredients in a blender or food processor until mixed into a thick slushie texture. Divide evenly among 4 tall glasses.

Chocolate Shake

Makes 4 servings, 1 cup each.

Ingredients

  • 2 cup skim milk
  • 1 pkg (4 serve) fat-free sugar-free instant chocolate pudding mix
  • 2 cup crushed ice

Instructions

Blend all ingredients 15 seconds at high speed in food processor or blender. Divide among 4 glasses.

Banana Date-Nut Cookies

Ingredients

  • 2 mashed bananas
  • 1 cup chopped dates
  • 1/3 cup oil
  • 2 cups quick cooking oats
  • 1/2 cup chopped nuts
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Instructions

Preheat oven to 350 F. Mix bananas, dates, and oil. Add oats, nuts, salt, and vanilla. Stir until blended, let stand 5 minutes. Drop with a teaspoon onto greased cookie sheet. Bake 25 minutes.

Gingersnaps

Ingredients

  • 6 Tbsp margarine -- softened
  • 2/3 cup + 3 Tbsp sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 cup all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground mace

Instructions

Preheat oven to 350 F. Cream margarine and add 2/3 cup sugar, beat until fluffy. Add molasses and egg, continue beating. Combine dry ingredients in separate bowl, gradually add to margarine mixture, stirring regularly. Divide dough in half, wrap in plastic wrap and freeze 30 minutes. Take each portion out and divide into 26 1-inch balls and roll in remaining 3 Tbsp of sugar. Bake 2 inches apart on greased cookie sheet for 12 minutes or until brown.

Sugar Cookies

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup plus 2 Tbsp sugar
  • 2 1/2 Tbsp butter
  • 2 Tbsp fat-free egg substitute
  • 1/2 tsp vanilla extract
  • 1/4 cup low fat vanilla frosting

Instructions

Preheat oven to 375 F. Beat sugar and butter together until fluffy. Combine flour, baking powder, and salt in a separate bowl. Beat egg substitute and vanilla into butter, stir into flour mixture. Turn out the dough on a lightly floured surface, roll out to 1/8 inch thick. Dip 2-inch cookie cutters in flour, cut cookies, transfer to greased baking sheets. Bake 8-10 minutes or until cookies turn golden on the bottom. Brush with frosting. Sprinkle with powdered or colored sugar.

Thank you so much for posting these :). My hubby actually goes back and forth using the Weight Watchers method between others that he wants to try, and he's got one heck of a sweet tooth, so this is an awesome reference. There's only so much sugar-free Jello he can withstand, lol...

for anyone who is looking at this after 12-1-2010, the points values are probably NOT the same as listed in these recipes. I suggest using the WW Recipe calculator to reconfigure using the NEW Points Plus program.

I tried the 1 point brownies and loved them! I whisked my egg whites until they came so a very soft peak and also added 1 tsp of baking powder so that the brownies would rise a little bit.

So nice a fudgy! Just like a brownie should be :-D

i tried the date nut and oats cookies didn't think i'd like them, after my first try i ate about a dozen of them, sprinking some icing sugar sure made them into sweets fit for my sweet teeth neighbours

I have been a member of weight watchers for about seven months and lost about 41 pounds and working on many more pounds to lose. Weight Watchers is a lifesaver for me and would not have it any other way. Thanks Weight Watchers!

I did weight watchers in Oakland maybe 9 years ago and lost 20 pounds. I have lost weight here in France simply because there is not the culture of having something to eat all the time wherever you are. I would like to lose another 10 pounds, maybe I should try some of these sweets because in France there is a bakery on every corner and the sweets are not expensive. Either I forgoe them all and then have a fall and a binge or I try some of your recipes. We'll see.
