Fat-Free Apple Pandowdy
Ingredients
- 5 large cooking apples, peeled and cored
- 1/3 cup sugar or Splenda
- 1 tsp ground cinnamon
- 1 tsp salt, divided
- 2 Tbsp unsweetened applesauce
- 1/3 cup light molasses
- 1/4 cup water
- 1 cup unbleached all-purpose flour
- 2 tsp baking powder
- 3 Tbsp low-fat or fat-free small-curd cottage cheese
- 3/4 cup skim milk
Instructions
Preheat oven to 375 degrees Fahrenheit. Spray 8 x 8 baking dish with zero-calorie, fat-free nonstick cooking spray. Thinly slice apples and toss with sugar, cinnamon, and 1/4 tsp salt, spoon into baking dish and set aside. In small saucepan over low heat, combine applesauce, molasses, and water until well blended and warm, pour over apple mixture in baking dish. In medium bowl, mix flour, baking powder, and 3/4 tsp salt, then cut in cottage cheese until mixture resembles coarse crumbs. Stir in milk just until moist. Drop dough in heaping tablespoons into 9 mounds on apple mixture. Bake 45 minutes or until crust turns golden and apples are tender. To serve, break up crust and stir into apples. Top with vanilla frozen yogurt or low-fat, slow-churned ice cream, if desired.
Maple-Baked Apples
Ingredients
- 6 large baking apples
- 3 Tbsp unsweetened applesauce
- 1/4 cup dark seedless raisins or currants
- 2 Tbsp chopped walnuts
- 1 tsp ground cinnamon
- 1 cup low-sugar maple syrup
Instructions
Preheat oven to 350 degrees Fahrenheit. Wash well and core from stem end, careful not to go through the bottom end of apples. Peel apples 1/3 of the way down. Place apples, peeled end up, in 13 x 9 baking dish. In small bowl, combine applesauce, raisins or currants, walnuts, and cinnamon. Spoon some of this mixture into the cored center of each apple. Pour maple syrup over and around apples, and bake 50 minutes or until very tender, basting with syrup from the baking dish every 15-20 minutes. Serve hot or cover and refrigerate for later.
