Low-Fat Banana Bread Pudding Recipes

These two banana bread pudding recipes are low in fat but high in flavor. The textures are very different, but both delectable, so in the end, it's a matter of personal taste.
For a larger crowd and longer preparation time, try the Baked Banana Rum-Raisin Bread Pudding, which requires a longer soaking time to ensure moisture while baking. For a quicker dessert for just the family or a small group of friends, make Steamed Chocolate-Banana Bread Pudding, where the prep time is shorter, and the pudding steams in a water-filled roasting pan in the oven. Or double the recipe, and feed a party!

Baked Banana Rum-Raisin Bread Pudding
Ingredients
- 1 loaf day-old white or egg bread
- 4 cups fat-free half and half
- 1 cup raisins or sultanas
- 2 Tbsp dark rum or lemon juice
- 1 cup granulated sugar
- 2 eggs
- 2 egg whites
- 1 ½ Tbsp vanilla extract
- 1 tsp cinnamon, divided
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- 4 ripe bananas, mashed
Instructions
Cube the bread and put to soak in half and half for 60 minutes. After 30 minutes, warm raisins over low heat in rum or lemon juice (or microwave 30 seconds on high). When hot, stir in ½ tsp cinnamon and let sit 30 minutes. Preheat oven to 325 degrees Fahrenheit. Beat eggs in small bowl, together with vanilla, remaining cinnamon, nutmeg, and ginger. Add mashed bananas and stir until well combined. Fold in bread mixture and raisin mixture. Spray a 9 x 13 inch baking dish with nonfat zero-calorie cooking spray, then transfer mixture to dish and bake 75 minutes, or until edges are lightly browned and toothpick or skewer inserted in the center of the pudding comes out almost clean.

Easy Steamed Chocolate-Banana Bread Pudding
Ingredients
- 2 cups evaporated skim milk
- 1 cup granulated sugar
- 2 eggs
- 4 egg whites
- 1 Tbsp vanilla extract
- 4 cups white bread cubes
- 2 ripe bananas, sliced
- 1 cup semi-sweet or dark chocolate chips
Instructions
Preheat oven to 350 degrees Fahrenheit. Beat together milk, sugar, eggs, and vanilla. Gently mix in cubed bread and sliced bananas and let sit 10 minutes to soak. Fold in chocolate chips. Spray a 9 x 5 inch loaf pan with nonfat zero-calorie cooking spray, then pour in mixture. Dampen a kitchen towel and use to line a roasting pan, then place loaf pan on towel in the middle of the roasting pan. Position roasting pan in oven, then fill with water to halfway up the side of the loaf pan and bake 60 minutes, or until toothpick or skewer inserted in the center of the pudding comes out clean.

A universal favourite at school dinners in the 50s was called Hippo. It was a long suet(?)
roll swimming in a 'river' of a mixture of coagulated golden syrup and milk which thickened to a gorgeous goo.. It was heaven. I have searched for a recipe in vain. Does anyone remember it and know how to make it. I'd be grateful to hear from you.
