Quick Low-Fat Drop Biscuit Recipes - Healthy

With variety of options for every occasion, these biscuit recipes are healthy, flavorful, quick to make, and quick to bake. For a basic biscuit, simply remove additions and use whatever oil or fruit butter you prefer.

Parmesan Biscuits

The distinctive olive oil and parmesan flavors of these biscuits make them the ideal complement to pasta dishes, or other Italian cuisine.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup skim milk
  • 1/4 cup olive oil
  • 1 cup grated low-fat parmesan cheese

Instructions

Preheat oven to 450 degrees Fahrenheit. Mix together in large bowl flour, baking soda, and salt. Add milk and oil and stir well until dough comes off easily from the sides of the bowl, then mix in cheese. Drop in tablespoon-sized amounts on ungreased baking sheets. Bake about 10-12 minutes or until lightly browned. Serve warm or let cool and store in airtight container.

Optional Additions

  • ½ tsp dried rosemary, added to dry ingredients
  • 2 Tbsp chopped parsley, added to dry ingredients
  • 1/4 cup snipped chives, added to dry ingredients


Chili-Cheese Biscuits

Great with beans, chili, soup or stew, these biscuits are flavorful and can be as spicy as you choose to make them!

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 3/4 cup skim milk
  • 1/4 cup vegetable oil
  • 3/4 cup reduced-fat cheddar cheese
  • 1/4 cup drained canned diced chiles or jalapenos

Instructions

Preheat oven to 450 degrees Fahrenheit. Combine dry ingredients, then stir in milk and oil until dough comes easily away from the sides of the bowl. Stir in cheese, then fold in chiles. Bake 10-12 minutes or until lightly browned.

Optional Additions

  • 4 slices cooked crumbled bacon, added with chiles
  • 1/4 cup chopped sauteed onion, added before chiles
  • 4 Tbsp diced ham, added with chiles
  • 2 Tbsp paprika, used to dust tops of biscuits before baking

 

Apple-Cinnamon Biscuits

These biscuits, lightly sweetened with apple butter and dusted with cinnamon-sugar, are perfect for snacking, coffee breaks, or after-dinner consumption. Reminiscent of scones, they pair well with spiced teas, and are delicious with whole-wheat flour as well!

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • ½ tsp apple pie spice
  • 1/4 cup apple butter
  • 3/4 cup skim milk
  • 1/3 cup finely chopped apple
  • 2 Tbsp sugar or Splenda
  • ½ tsp ground cinnamon

Instructions

Preheat oven to 425 degrees Fahrenheit. Mix flour, baking soda, salt, and apple pie spice in large bowl. Stir in apple butter, then add milk and mix until well combined and dough comes away easily from sides of bowl. Fold in apple pieces. In shallow dish or pie plate, mix sugar or Splenda and cinnamon. Take tablespoon-sized amounts of dough and dip the tops in this mixture before placing on ungreased baking sheets. Bake 12-14 minutes or until lightly browned, and pick inserted in center of biscuit comes out clean. Serve warm with spiced apple butter or with cinnamon tea.

Optional Additions

  • 1/3 cup raisins or sultanas, folded in with apples
  • 1/3 cup chopped dried apricots, folded in with apples
