A doughnut rolled in cinnamon & sugar

Donuts and coffee are a delicious breakfast or snack, but not always the healthiest option. The donuts you buy in the shop are made from recipes full of saturated fat, and fried in more to boot! Next time you're craving a dunkable treat, or need something to bring to a calorie-concious gathering, try out this low-fat alternative to the Krispy Kreme: homemade baked donuts. Evaporated skim milk provides richness, while baking eliminates the added fat from cooking in a deep fryer.

Low-Fat Baked Donuts

Ingredients

  • 1 1/3 cups unsweetened evaporated milk
  • 1 packet dry active yeast
  • 2 Tbsp unsalted butter or margarine
  • 2/3 cup granulated sugar or Splenda
  • 2 eggs
  • 5 cups white flour
  • 1/8 tsp ground nutmeg
  • 1 tsp fine sea salt

Instructions

In a small saucepan over medium-low heat, warm milk to 95 degrees, stirring constantly to avoid scalding. Set aside 1 cup of milk, and pour the other 1/3 cup into a large bowl and add the yeast. Stir in briefly, then let sit for five minutes. Meanwhile, mix the sugar and butter into the other cup of milk. Add to yeast mixture, then use a fork to stir in eggs, nutmeg, salt, and flour, just until the flour is fully mixed into the batter.

Using clean hands or an electric mixer with a dough hook, knead the dough in the bowl until it begins to pull away from the sides and becomes smooth and glossy. If the dough is too sticky, add a little flour. If it seems too dry, you can add a bit more milk. Lightly flour a working surface or counter and knead briefly, then shape into a ball, transfer to a bowl sprayed with nonstick cooking spray and put in a warm place to rise until doubled (about an hour).

Punch down and use a lightly floured rolling pin to roll the dough out into a 1/2-inch thick sheet. You can either use a donut cutter to cut out donuts, or a cookie cutter or the top of a plastic bowl. Line a baking sheet with parchment paper and cut out the centers with a smaller cutter or melon baller. Cover with a damp cloth and allow to rise an additional 45 minutes. Preheat your oven to 375 degrees and bake for 8 to 10 minutes or until the bottoms begin to turn golden. Instructions for glazing or sugaring below.

Donut Topping Options

Cinnamon and Sugar Donuts

Spray warm donuts thoroughly with nonstick butter-flavored cooking spray and toss in a bowl of cinnamon and white or brown sugar.

Powdered Sugar Donuts

Spray warm donuts with nontstick cooking spray and coat with powdered (confectioner's) sugar.

Glazed Donuts

Stir together 1/4 cup low-fat or evaporated skim milk and 1 tsp vanilla in medium saucepan over low heat. Add 2 cups sifted confectioner's (powdered) sugar, whisking gently until combined. Set mixture in a bowl over warm water while dipping donuts in glaze. Set donuts on rack to drain for 5 minutes before serving.

Frosted Donuts

Stir together 1/4 cup cold low-fat or evaporated skim milk and 1/2 tsp vanilla. Add 3-6 Tbsp fat-free or low-fat whipped topping, whisking constantly, until icing reached desired consistancy. Mix in 2 Tbsp non-instant pudding mix (chocolate pudding for chocolate icing, vanilla pudding for vanilla icing, butterscotch pudding for butterscotch icing, etc) until well combined. Frost room-temperature donuts with icing and serve.

Your hub reminds me of a company a few years ago that was re-packaging krispy kreme donuts as "low-fat" donuts, until he was caught. This donut recipe is definitely worth trying.

I will definitely give this a try. Baked doughnuts are a GREAT alternative to the kinds you'll find in a donut shop or even Wal-Mart! Much better for you.

mmmm...Thanks! I just found a second hand 70's era doughnut baker and can't wait to try this recipe! It will be a nice, healthier departure from the deep fried ones we used to make, especially since I often sub other whole grains in with delicious results.

This caught my eye. Donuts are tasty, but typically fattening. I can't wait to try this! I'm going to improvise the recipe a bit and add coco powder and roll the finished product in coconut.

I don't understand why Dunkin Donuts, Krispy kreme, Hostess, Entenmanns, Nickles,etc doesn't start selling these kind of doughnuts. I bet these are darn good dunked in coffee! Are they as soft as regular doughnuts?

Must enlighten you all. Cake donuts ARE NOT made with yeast. Donuts with yeast in them are raised donuts, called such because the dough must rise. And with butter, sugar, and white flour in the recipe, these hardly qualify as healthy!

Great recipe - we did donut hole size ones and coated in cinamon and sugar then filled with raspberry jam. They were a hit. Made 43 small (about 2 inch diameter) donuts.

I want to try this recipe. I always hated it-when I was at Shipley's Donuts/Krispy Kreme Donuts/ and/or that other place was it Dunkin Donuts? I would ask for their Low-fat no-sugar donuts and they would give me The Look! Like I had offended them or broken the Commandment of Fat Donuts or something. If businesses would be more people-oriented they wouldn't lose customers. Now,( is it coincidentaly the word?) Dunkin Donuts had great donuts,Capuccinos, and Ice Cream but no low fat no sugar donuts.

Rather then asking what the fat content is, or asking for the calories, work it out. Knowing how to work out how much sugar/fat is in something will help you eat healthier, i dare say. The amount of fat in these is nothing compared to what you'd get in a store bought version, using splenda reduces sugar, and if you are worried about grains, experiment, see if you can add some healthier flour.

overall, these were perfect for a special, healthier treat.

Actually, this made 30 donuts plus donut holes, so figure about 2 points (WW) for each. I used fat-free evaporated milk. I also am only baking 6 of them today. I cut all of them out and am going to freeze the rest unbaked (didn't do the second rise) and all of the donut holes unbaked. Then when we need more donuts, I'll take 6 out, thaw and do the second rise, and bake them.

I typed the ingredients into my Living Cookbook program and since the recipe doesn't say how many it makes, indicated that it would yield 24 donuts. With that yield, each has only 143 calories and 1.68 grams fat! The carbs however are 27 each which is a bit high so just skip 1 or 2 pieces of bread the day you enjoy your donuts. Can hardly wait to try them.

Haven't tried your recipe yet but it sounds like my sweet roll recipe that I use when making cinnamon rolls. Why in the world would you scald evaporated milk?? It has already been processed and the enzymes have, therefore, been removed. The only time you need to scald milk is if it is milk from the store or, of course straight from the cow.

Hi Rose,

I have never made these with whole wheat flour. Usually, whole wheat flour changes the texture of a baked good, and requires more kneading. I might try half-and-half (whole wheat and white flours), and see how that turns out. If you try it, let us know your results.
