Fat Free Chocolate Cupcakes

Makes 12 cupcakes.

Ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 cup white sugar or sugar substitute
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup fat-free plain yogurt
  • 1/2 cup skim milk
  • 4 egg whites
  • 1 teaspoon vanilla extract

Instructions

Preheat oven to 400 degrees Fahrenheit. Mix dry and wet ingredients separately, then stir just until combined. Line a 12-cup muffin tin with cupcake papers or spray with nonstick zero-calorie spray, fill each cup 2/3 full with batter. Bake 15-20 minutes or until toothpick inserted in the center of one of the cupcakes comes out clean.

Low Fat Vanilla Cupcakes

Makes 12 cupcakes.

Ingredients

  • 2 cups white flour
  • 1 cup white sugar or sugar substitute
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • ½ tsp salt
  • 1/2 cup skim milk
  • 1/4 cup vegetable oil
  • 1/4 cup fat-free plain yogurt
  • 1 egg
  • 2 egg whites
  • 1 tsp vanilla extract

Instructions

Preheat oven to 350 degrees Fahrenheit. Mix dry and wet ingredients separately, then stir just until combined. Line 12-cup muffin tin with cupcake papers and divide batter evenly. Bake 25 minutes or until toothpick inserted in the center of one cupcake comes out clean.

Low Fat Lemon Cupcakes

Makes 12 cupcakes.

Ingredients

  • 1 3/4 cups white flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsweetened applesauce
  • ½ cup white sugar or sugar substitute
  • 1 Tbsp vegetable oil
  • 1 egg
  • 1 cup fat-free sour cream
  • 1/2 lemon, juice and zest of

Instructions

Preheat oven to 350 degrees Fahrenheit. Combine dry ingredients and set aside. Whisk together applesauce, oil, and sugar. Add egg and beat well, then stir in lemon zest and juice. Alternately stir in flour mixture and sour cream in stages, then divide among 12 paper-lined muffin cups. Bake 20-25 minutes or until toothpick inserted in the center of one cupcake comes out clean.

Low Fat Red Velvet Cupcakes

Makes 12 cupcakes.

Ingredients

  • 1 3/4 cups white flour
  • 1/4 cup unsweetened cocoa powder
  • ½ tsp salt
  • 1 cup white sugar or sugar substitute
  • ½ cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 3/4 cup fat-free egg substitute
  • 2 Tbsp red food coloring
  • 1 tsp vanilla extract
  • ½ cup fat-free buttermilk
  • 1 1/4 tsp white vinegar
  • 1 tsp baking soda

Instructions

Preheat oven to 350 degrees Fahrenheit and line 12-cup muffin tin with cupcake papers. Mix together flour, cocoa, and salt and set aside. Whisk together oil, applesauce and sugar until well combined, then add egg substitute gradually, mixing well. Stir in food coloring and vanilla, then add fat-free buttermilk (to make your own see Low-Fat Cooking Tips) and flour alternately, beginning and ending with flour. Separately, mix vinegar and baking soda and allow to fizz, then fold in, stirring just until combined. Pour into cupcake papers and bake 15-20 minutes or until toothpick inserted in the center of one cupcake comes out clean.

I calculated the nutritional info for the red velvet cupcakes so i thought I'd save some people's time by posting it, although I did substitute the vegetable oil with low fat butter it's still around the same (like 40 kcal and 2g of fat more). So it's 130 kcal and 4.4g of fat for one cupcake. Enjoy!

Susan,

Fat free cupcakes are a little spongier than their full-fat counterparts, but should definitely not be rubbery.

What kind of yogurt are you using? Different brands have different consistencies. It may also be that you are over-mixing the batter.

Just made some of the vanilla cupcakes, and they turned out great! I made a double batch and split it in half to make one half with strawberries, blueberries and black berries, with extra vanilla (Very good!!), and the other half I added 1tsp of lemon extract (on top of the vanilla) and then fresh cranberries. I used a vanilla flavoured yogurt instead of plain and you can really tast it! So good and tangy! I also only used 3/4c of sugar (per batch) instead of 1 cup, which was plenty. I would consider using only a 1/2 cup of sugar next time. Maybe using the vanilla yogurt made a difference. I made the lemon cranberry muffins with the vanilla cupcake recipe because I didn't have applesauce (which it calls for in the lemon cupcake recipe) but I did have yogurt.

I just made the vanilla cupcakes. They are good-though DEFINITELY more like a MUFFIN than the typical cupcake. Not as much light and over sweetly fluffy, but a little more dense and less sweet. I kind of wish I had added blueberries before I made them because this would be the PERFECT blueberry muffin recipe.

woow!! these are amazing i made them for my student councel meating because im president and everyone loved them. i substituted fat free yogurt in the chocolate ones for fat free sour cream and it worked out great. they were a little spongy but i havent had better FAT FREE cupcakes ever. the one with fat are bettr but these will do.

Ok, I made the low fat vanilla ones and they turned out wonderful, just use cake flour instead of regular. I have tried several recipes and even tried making my own but this recipe turned out wonderful!

I made these today but i am allergic to wheat so i used wheat free flour ! I dont usually like cakes but i mad them anyway they stuck to the paper cases and were a bit spongy and i used greek yogurt instead of plain yogurt ! I made icing with margarine but was too buttery but they were ok and the kids like them so yeah lol :)

I made the Chocolate cupcakes. They were great!! My kids and husband loved them too. With no icing they are 2 pts on Weight Watchers. I also used whole wheat flour to make them even healthier!!! Yummy!!!

I just tried the Chocolate Cupcake recipe today. They are pretty good, but they were a little spongey, and they stuck to the cupcake paper. If it wasn't for that they'd be perfect. I paired them with sugar free chocolate icing made with Dream Whip, milk, vanilla, and chocolate pudding mix. Yum.
