Fat-Free Mince Meat & Low-Fat Mincemeat Dessert Recipes

Fat-Free Mincemeat

Ingredients

  • 1 ½ cup hard apple cider
  • 1 lb dark brown sugar
  • 4 lbs apples, cored & chopped (not peeled)
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 ½ cup dried currants
  • 1 ½ cup dark raisins
  • 1 cup golden raisins
  • ½ cup candied cherries (glace, not maraschino)
  • ½ cup candied orange peel
  • ½ cup almonds, finely chopped
  • 1 fresh orange
  • 1 fresh lemon
  • ½ cup brandy or rum

Instructions

Add cider and sugar to medium saucepan and heat over medium-low heat until sugar is completely dissolved. Grate orange and lemon rind to zest, then juice each. Stir these, along with all other ingredients, except brandy or rum, into cider mixture, and bring to boil. Turn down heat to low and simmer 35-40 minutes. Remove from heat and let cool. When completely cold, stir in brandy or rum, then spoon into cold, sterilized jars and pack down to eliminate air bubbles. Seal jars tightly. Store sealed for at least 1-2 weeks before using in pies or other dishes. (For a sweeter, less "alcoholic" mincemeat, use unsweetened apple juice instead of hard cider, simmer for a shorter time to retain more liquid, and use only a 1/4 cup brandy or rum.)

Low-Fat Mincemeat Pie

Ingredients

  • 1 low-fat pie crust
  • 1 jar fat-free mincemeat (see above)
  • 4 medium apples, diced
  • ½ cup unsweetened fresh orange juice
  • 2 egg whites, lightly beaten
  • 1/4 to 1/3 brown sugar, to taste

Instructions

Preheat oven to 350 degrees Fahrenheit, and prepare pie crust. In medium bowl, mix mincemeat, diced apples, orange juice, and egg whites. Stir in sugar to taste, depending on the tartness of your mincemeat. Sprinkle pie shell with a small amount of sugar, then spoon in filling. Bake 45 minutes or until bubbly.

Low-Fat Mincemeat Oatmeal Squares

Ingredients

  • 1 ½ cup dry rolled oats
  • 1 cup unbleached flour
  • 1/3 cup white sugar
  • 3 Tbsp unsalted butter, softened
  • ½ cup unsweetened applesauce
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 jar mincemeat

Instructions

Preheat oven to 400 degrees Fahrenheit. Spray 8 x 8 inch baking pan with zero-calorie nonstick cooking spray. In large mixing bowl, combine all ingredients except mincemeat, pressing with fingers to form fine crumb-y texture. Press two-thirds of mixture into pan, spread mincemeat evenly over crust, then sprinkle remaining batter over the top and press gently. Bake 20-25 minutes. Remove from oven immediately when top begins to brown. Cool on rack, cut into squares and serve.
