Low Fat Healthy Peppermint Dessert Recipes
Fat-Free Peppermint Cream
Ingredients
- 24 regular-sized marshmallows
- 1/2 cup fat-free milk
- 1 tsp vanilla extract
- 3 drops peppermint extract
- 1/8 tsp salt
- 2-4 drops red or green food coloring (optional)
- 8 oz fat-free whipped topping
Instructions
In double boiler (or heat-safe bowl over a boiling pot of water), melt marshmallows in skim milk. Remove from heat and let cool 5 minutes. Beat in salt, vanilla and peppermint extracts, and green food coloring, if desired. Chill until cold and slightly thickened. Fold in whipped topping, spoon into serving dishes (parfait glasses, small bowls or ramekins), and chill until firm. Serve cold.
Garnish ideas: Sprinkle with crushed oreos, crushed peppermint candies, or chocolate shavings.
Easy Low-Fat Frozen Peppermint Pie
Ingredients
- 24 crushed oreo cookies
- 1/4 cup melted butter
- 1 pint fat-free vanilla frozen yogurt, softened
- 1/2 cup crushed peppermint candies
- 8 oz fat-free whipped topping
- red food coloring (optional)
- fat-free chocolate topping
Instructions
Combine melted butter and crushed cookies. Press into the bottom and sides of a 9-inch pie plate to create an oreo crust. Place in the freezer while you prepare the filling. Stir together softened ice cream and crushed candies, then fold in whipped topping. Stir in red food coloring (if desired) until evenly combined. Pour into crust, and drizzle with chocolate topping (in a pattern or drawing shapes, if you like). Freeze until firm. Remove from the freezer 5 minutes before serving to ease slicing.
Low Fat Chocolate-Peppermint Fudge
Ingredients
- 1 1/3 cup white sugar (or substitute)
- 1/2 cup fat-free evaporated milk
- 1/4 cup butter
- 1/4 tsp salt
- 6 oz semi-sweet chocolate chips
- 3/4 cup marshmallow creme
- 2/3 cup crushed peppermint candies
- 1 tsp vanilla extract
Instructions
Combine sugar, evaporated milk, butter, and salt in medium saucepan over medium-low heat. Bring to a boil, stirring constantly, and let boil 5 minutes, continuing to stir. Remove from heat and immediately add chocolate chips. Stir until melted. Add marshmallow creme, vanilla, and crushed peppermint candies. Spray an 8-inch baking dish with nonstick cooking spray, and pour in fudge mixture. Let cool to room temperature, cover, and refridgerate until firm. Cut into one-inch squares to serve.
